<P><STRONG>【制法】:1.山根放入滾水煮軟,撈起滴乾水每只切開二件。</STRONG></P>

<P><STRONG>雲耳用清水浸軟洗淨放滾水中煮五分鐘撈起滴乾水,蔥切二寸長,玉米筍、菜膽、胡蘿蔔切絲。</STRONG></P>

<P><STRONG>2.雞去皮,洗淨抹乾水斬塊,加醃料醃十分鐘,泡油;</STRONG></P>

<P><STRONG>下油二湯匙爆香薑、蔥,下雞兜勻,下酒二茶匙,熄火。</STRONG></P>
<P><STRONG></STRONG> </P>
<P><STRONG>3.在煲內下油一湯匙,下雲耳、山根、玉米筍、菜膽、胡蘿蔔絲,加入調味煮滾,再煮片刻勾芡。</STRONG></P>

<P><STRONG>下雞及薑蔥兜勻煮滾。</STRONG></P>

<P><STRONG>4.用另一煲煲飯,熟後倒入雞煲,再稍煲片刻,原煲上席。</STRONG></P>
