<P><STRONG>【制法】:1.將豬蹄刮毛洗淨,剁去爪尖,劈成兩半,用水煮透後放入涼水中。</STRONG></P>

<P><STRONG>薑、蔥拍破待用。</STRONG></P>

<P><STRONG>2.用炒勺將少許香油燒熱,放入冰糖炸成紫色時放湯調至淺紅色為度。</STRONG></P>
